TEACHER: Welcome to the first evening of our six-week international cooking course. I'm Maya, and I'll be teaching most of the classes. We meet every Tuesday from six thirty until eight thirty in Kitchen Two. Next week only, we'll use Kitchen One because this room is being repaired.
Each week focuses on a different kind of food. Tonight we'll make fresh Italian pasta. Next week is Thai cooking, followed by Mexican street food. In week four, a guest chef will show us how to make Japanese sushi. The final two classes cover bread and vegetarian desserts.
All the main ingredients are included in your course fee. However, please bring a container each week so you can take food home. You should also wear closed shoes for safety. We provide aprons and all the cooking equipment. If you have a food allergy, tell me before we begin, even if you mentioned it on your application form.
Tonight, you'll work in pairs. First, I'll demonstrate how to prepare the pasta dough. Then you'll have forty minutes to make your own. While the dough rests, we'll prepare two sauces: a simple tomato sauce and a mushroom sauce. At the end, everyone will taste both dishes together.
There is tea and coffee on the table by the door. Please keep drinks away from the cooking area. The toilets are across the corridor. If you have questions during the class, just ask. Let's begin by washing our hands.
